Does Dejon Delights use Wild Alaskan Salmon?
You bet! The salmon, halibut and black cod we smoke is all ocean run, wild, and caught by local fishermen and processed by local residents.
What is the difference between hot and cold smoked salmon?
The terms hot smoke and cold smoke refer to the temperature the fish is processed at, not the spiciness of the fish. Hot smoked means that the fish is fully cooked, producing a flaky texture that is ready to eat. Cold smoked means the fish was smoked at 85 degrees, keeping the texture smooth and velvety, much like sushi. The cold smoked salmon is not fully cooked, but it is ready to eat right out of the package.
What do you mean by hand crafted?
Dejon Delights uses time tested methods to produce the finest smoked salmon, halibut and black cod available. We start by hand filleting the fish, instead of running it through a fillet machine. Then, we apply dry brine by hand to each fillet. Very few smoke houses use dry brine these days. Most use a wet brine where the fish are added to a vat with a mixture of water, salt and spices. The fish is left for only one to a few hours, and this brine is reused on several batches of fish. Dejon Delights dry brine is left on the fish for sixteen hours, so it fully imparts the delicious flavor of our secret recipe. Dry brining is both an art and a science.
Is the cold smoked “lox style” pre-sliced?
No, Dejon Delights does not pre-slice its cold smoked (lox style) salmon, because it introduces air to the product and reduces its quality.
How long does an order placed USPS Priority Mail take to receive?
We try to send your orders out as soon as possible. If you chose USPS Priority Mail, it typically takes 3 to 6 days (sometimes longer) to receive it from the date we mail it. The mail is carried on a small plane from Haines to Juneau first, so delays can occur due to inclement weather. If you need to receive an order by or on a certain day, Fed Ex is the preferred method.
How long does an order placed Federal Express Standard or Priority Overnight take to receive?
Orders shipped Federal Express Standard or Priority Overnight take two days because we first send your package to Juneau, and Fed Ex picks it up the next day. For instance, we receive your order over the weekend. We pack it up and send it to Juneau on Monday. Fed Ex picks it up on Tuesday and will deliver it on Wednesday. Fed Ex Overnight orders are available for delivery on Tuesday, Wednesday, Thursday and Friday. Please call for Saturday delivery. Packages are flown on small aircraft, all delivery times are weather permitting. (Perishable items are kept under refrigeration while in Juneau).

My order of smoked salmon (fish) just arrived, what do I do with it?
Unless you are going to dive in and start eating it right now, it is best kept under refrigeration for extending the shelf life. For best quality, we recommend keeping it in the refrigerator for one month or in the freezer for up to six months. If you’re not sure when you’re going to eat it, place it in the freezer and then thaw it in the refrigerator overnight.
I’m going on a trip and won’t have refrigeration available; can I take my smoked salmon along?
You bet. We are required by the health department to affix a label that says “Keep Refrigerated at 38 ۫ F or Below,” Science and years of experience say otherwise. Many of us take along smoked salmon and halibut in our suitcase to hand out as gifts to friends and relatives down south.
Do I have to cook the smoked fish before eating it?
No, all of Dejon Delights fish is ready to eat straight from the package.
You can dress it up with some nice crackers or bread, cream cheese, brown mustard, capers, red onions, etc.
Or, you can add it to one of your favorite pasta recipes.

There's some white stuff on the smoked salmon, what is it?
That is fat that liquified during the smoking process or, if it was kept at room temperature for some time, that leached out from the flesh and then solidified. It is just fine to eat.
Can you freeze the smoked fish?
Yes, up to six months for best quality but it can go longer. It is best thawed in the refrigerator overnight.
How many days is the smoked fish good for once I open the package?
It will be best for 4 or so days, but will go a week.
What’s the best way to cut the smoked salmon?
The best way to cut the smoked salmon is when it is still cold with a sharp knife. To cut the hot smoked salmon, remove the skin (if you prefer) and place the fish on a cutting board. If you want strips, make cuts against the grain. If you want cubes, first make slices against the grain and then make the cross cuts with the grain. You can then slide the fish onto a serving platter.
For cold smoked salmon, simply place the fish on a cutting board and cut thin slices at a forty-five degree angle, leaving the skin behind.
Can you eat the skin?
Yes, it’s actually loaded with healthy oils and is good for you. But, most people remove the skin before eating. If it is hot smoked fish, the skin will just peel right off. If it is cold smoked salmon, the skin doesn’t peel off and you slice the salmon leaving the skin behind.
Which smoked fish is best?
This is a very subjective question. The answer is which ever one you like the best. Sockeye (Red) Salmon remains our best seller.
Does Dejon Delights smoked fish contain any preservatives?
No, we use wild Alaskan salmon and all natural ingredients.
