Sausage and Smoked Salmon Chowder

8 cups chicken stock
1 cup of flour
1 cup onion, finely diced
2 tablespoons of margarine
8 oz Dejon Delights Smoked Salmon, skinned and chopped*
8 oz Smoked Sausage of your choice sliced
4 medium potatoes, cooked and cut in bite sized chunks
1 cup milk
1 cup light cream
salt and white pepper to taste

Heat the chicken stock in a large saucepan on medium heat.
In a separate large pan, melt margarine and
sauté the diced onions until they are translucent.
Add flour to the melted margarine and stir continuously for 5 minutes.
Increase heat on stock to medium-high, and with a wire whisk, add flour,
margarine and onion mixture to the liquid.
Stir constantly, breaking up any lumps that form.
Add Sausage and stir. Add potato chunks, milk, cream, and salt and pepper to taste, and continue stirring. Add Dejon Delights Smoked Salmon and decrease heat to medium-low, and allow to simmer for about 20 minutes, stirring frequently to avoid burning or sticking.
Serve hot with crackers, or Sourdough bread
