Sauce: 3 tbs. butter 3 tbs. flour 1 tsp. dry mustard 1 1/2 cups milk 1/4 cup Gruyere cheese Crepes: 12 crepes 12 slices Dejon Delights Smoked Salmon* 1 cup sour cream 1/2 cup Parmesan cheese
Melt butter in a saucepan and blend in flour. Cook 2 minutes. Slowly add milk stirring until thickened. Add Gruyere cheese. Cook until thick and bubbly. Add salt and Pepper to taste. Remove from heat. Spread crepes with sour cream, placing one slice of Smoked Salmon in the center. Roll crepe and place in a buttered pan. Pour Cheese sauce over and sprinkle with Parmesan cheese. Place in a preheated broiler for 3-5 minutes, or until cheese is brown and bubbling.
