1lb Dejon Delights Smoked Salmon, flaked*
2 eggs well beaten
1/2 cup Parmesan cheese
1/2 cup breadcrumbs
1tsp salt
1tsp black pepper
2cloves crushed garlic
1/2 cup olive oil
In
a large bowl add all the ingredients except the olive oil.
Mix very well, and form into 3 inch balls.
Heat olive oil in fry pan on med/hi heat.
Add the balls and cook about 4 minutes each until golden brown.
When done, drain on paper towels and serve with your favorite tomato sauce.
Makes enough to feed about 5 salmon lovers.
