Smoked Salmon Soufflé
2 tablespoons butter, melted
1/2 cup milk
2 slices sourdough bread torn into pieces
12 ounces Dejon Delights Smoked Salmon, flaked*
2 eggs separated
3 tablespoons lemon juice
2 tablespoons minced red onion
1 teaspoon salt
1/2 teaspoon ground black pepper
paprika

Mix butter, milk, and bread. Stir in Dejon Delights Smoked Salmon, egg yolks, lemon juice, onion, salt, and pepper.
Beat egg whites until stiff, and fold into salmon mixture. Pour into greased 1 1/2 quart casserole dish.
Sprinkle with paprika, and bake uncovered 1 hour.
Serves 4-6
