Smoked Salmon and Cheese Chowder
6 tbs. butter
1 1/2 cups chopped onion
1 can cream-style corn
1/2 lb. Dejon Delights Smoked Salmon, flaked*
2 tbs. flour
6 cups milk
2 cups shredded cheddar cheese
1/2 cup white wine

Melt butter in a medium-sized stock pot over medium heat. Add onions, and saute until tender, 10-15 minutes. Stir in creamed corn and salmon. Cook 3 minutes; add flour and cook one more minute. Gradually stir in milk and simmer for 10-15 minutes, but do not allow this to boil. Add cheese, a little bit at a time, stirring constantly to melt into the liquid. When cheese is melted and smooth, stir in white wine. Taste for seasoning. Serve immediately.
