Smoked Salmon and garlic eggrolls
12 oz Dejon Delights Smoked Salmon, minced*
4 cups of leftover garlic smashed potatoes**
1/2 c minced white onion
20 eggroll wrappers
Mustard

Mix Dejon Delights Smoked Salmon, potatoes and onion together in bowl.
Put in eggroll wrappers according to package directions
Deep fry for 2-3 minutes (or can be frozen and deep fried later)
Serve hot with mustard for dipping

*or Dejon Delights Smoked Halibut
**or mash 4 large baked or boiled potatoes (with skins) in 2 tbsp minced garlic (more if you love
garlic), about 1/2 c. beef broth, butter, and salt and pepper to taste
